One of my favorite things is trying out new recipes. I get bored eating the same meals over and over, and cooking has become a small way to break up the routine. Lately, my husband and I have also been trying to make healthier choices, which can be a challenge when you’re cooking for a picky eater and just want something that works.

I recently found this chicken and rice recipe, which you can find here, and it immediately appealed to me. I love an easy one-pot meal that uses common ingredients and won’t leave me with a pile of dishes at the end of the night.

As it cooked, the kitchen slowly filled with that warm, savory smell that makes a space feel settled. Nothing fancy or overdone, just the quiet comfort of dinner coming together. I tasted as I went, adjusting a little here and there, and could tell it was going to be good in that reassuring, no-surprises way.

My husband isn’t one to really tell me if he likes what I make or not. He doesn’t gush or critique—he just eats. But at one point, I looked over and we made eye contact, and he smirked. That small reaction told me everything I needed to know.

There is just something about people enjoying the meals that I make that just makes my heart warm! It doesn’t have to be extravagant or impressive. Sometimes it’s just a warm plate of food, good flavor, and the quiet knowledge that it landed. Simple, ordinary, and exactly enough.
